It all started way back in the summer of 2010…
My husband and I took a long weekend trip to Montreal. We ate our way through all the best vegan spots in the city, but one of the highlights was a casual little vegan eatery named Aux Vivres. There, I was introduced to the magic that is COCONUT BACON. I had never heard of it before, and fell immediately in love. Smoky, salty, crispy, crunchy… it was the vegan bacon of my dreams and I became obsessed with it. I vowed to recreate it when I got home!
And I did make it when I got home. To this date, the recipe I posted for coconut bacon made it the most popular and searched-for post on my site. Turns out, I wasn’t the only one obsessed with coconut bacon!
And now, 5 years after I first savored that Coconut BLT, I am beyond thrilled to announce my first cookbook, inspired by that very recipe!
